4 Cozy Fall and Winter Coffee Syrups You Can Make at Home
Fall and winter are perfect seasons for warm drinks and sweet flavors. You don’t need store-bought syrups to make great lattes at home. Today I’ll show you four simple syrups you can make in your own kitchen. Each one brings a different taste and works well with hot lattes, iced drinks, cold foam, or even desserts.

Apple Cinnamon
Roasted Pecan
Pumpkin Spice
Grenadine (Pomegranate)
These syrups are easy, full of flavor, and made with fresh ingredients. Let’s get started.
1. Apple Cinnamon Syrup
This syrup tastes warm, bright, and sweet. It works with hot lattes, iced coffee, and even on pancakes.
Ingredients
1 Honeycrisp apple, sliced
1.5 cups water
1 cup sugar (I used allulose)
3 cinnamon sticks
Pinch of salt
1/2 tsp vanilla extract
Instructions
Add the sliced apple, water, and sugar to a saucepan.
Bring to a boil for 10 minutes.
Add the cinnamon sticks and a pinch of salt.
Boil for 10 more minutes.
Turn off the heat and let it cool until warm.
Add vanilla.
Strain and bottle.
Shelf life: 2 to 3 weeks in the fridge.
2. Roasted Pecan Syrup
This syrup tastes deep and nutty. It is smooth and works well with hot lattes, iced lattes, and cortados.
Ingredients
1 cup crushed pecans
1 cup sugar (or allulose)
1 cup water
1 cinnamon stick
Pinch of salt
1 tbsp maple syrup
1 tsp vanilla extract
Instructions
Toast the crushed pecans for 2 minutes.
Add sugar and water. Bring to a boil.
Simmer for 7 minutes.
Add the cinnamon stick and salt for the last 3 minutes.
Strain right away.
Let it cool. Then add maple syrup and vanilla.
Shelf life: About 2 weeks in the fridge.
Tip: Great with hot drinks and rich cold foam.
3. Pumpkin Spice Syrup
This syrup brings classic fall flavor. It is sweet, warm, and perfect for lattes.
Ingredients
1 cup water
1 cup brown sugar (or allulose)
3 tbsp pumpkin purée
2 cinnamon sticks
4 cloves
1/4 tsp cardamom
1/4 tsp nutmeg
3 strips lemon peel
1 sage leaf
1/2 tsp vanilla extract
Pinch of salt
Instructions
Add water and sugar to a saucepan. Melt fully.
Add pumpkin purée and spices.
Lower the heat and simmer for 10 minutes.
Add lemon peel and sage for 2 to 3 minutes.
Strain well.
Let it cool fully. Add vanilla and salt.
Shelf life: About 2 weeks.
Note: Strain through a coffee filter for a smooth syrup.
4. Grenadine (Pomegranate) Coffee Syrup
This one is bright, sweet, and slightly tart. It tastes great in iced lattes, cold foam, and even affogatos.
Ingredients
1 1/4 cups fresh pomegranate juice
1 cup sugar (or allulose)
3 lemon peels
Pinch of salt
1 tsp vanilla extract
1/2 tsp lemon juice
Instructions
Add pomegranate juice, sugar, lemon peels, and salt to a saucepan.
Bring to a boil, then simmer for 15 minutes.
Let it cool a little.
Add vanilla and lemon juice.
Bottle and chill.
Shelf life: 2 to 3 weeks.
Tip: Pairs well with iced coffee and cold foam.
